Recipe: Agua Fresca de Jamaica

I would like to share a recipe I got from my Spanish teacher, Leonor Dukes.

2 cups jamaica flowers (dried hibiscus flowers)
¾ cup sugar (or more)
6 lemons
6 cups water (or more)

Bring 6 cups of water to a boil, then add the flowers.  Turn off the heat, then cover and let it soak for two hours.  (Another option is to leave the flowers all night in a bowl with water, without boiling it.  Strain the mixture through a sieve, pressing on the flower solids to extract as much liquid as possible.)

Add the sugar and stir.  Taste for strength and sweetness.  If it is too strong, add some water.  If it is too tart, add more sugar.  Add lemon for a very special taste.  Enjoy!
