Pumpkin Quesadillas

Thanksgiving is right around the corner, so we thought we should share a super-scrumptious, easy recipe to bring some fall pizazz to your family’s feast! These pumpkin quesadillas are nice and crisp yet gooey on the inside.

What you need:
2 cups canned pure pumpkin puree
1 tsp ground cumin
8 8-inch flour tortillas
1/4 cup vegetable oil
1/4 cup chopped walnuts (toasted) – optional

What you do:
In a bowl, mix the pumpkin puree and the ground cumin together. Spread the mixture over 4 tortillas. Sprinkle the walnuts over the pumpkin mixture. Top it off with the remaining tortillas.

In a large skillet, heat 1 Tbsp oil over medium-low heat. Cook the quesadillas one at a time, turning once and adding more oil between batches, until browned (about 3 minutes).

Cut them into wedges and enjoy!
