If you are having a party and don’t know what to make, we have some ideas for you. A Christmas Salad with beets and cucumbers is a healthy and colorful way to start the meal. You could also make Spinach Dip.

For a main dish, you could make Gumbo or Lettuce Wraps, which are great for vegetarians. For dessert, try making Sweet Potato Pie or Pineapple Sheet Cake. Now you have a perfect meal!

Christmas Salad
4 medium beets
2 Tbsp minced fresh dill
1 pint grape tomatoes
1 cucumber, peeled and chopped
1/4 cup white wine vinegar
1/4 cup extra-virgin olive oil
3-4 green onions, chopped

Preheat oven to 450° F. Wash beets, trim down the stems to 1 to 2 inches long, then place the beets on a baking sheet. Bake 30-40 minutes, or until tender. Let cool. Then peel the beets and cut them into cubes.

In a large bowl, combine beets, dill, tomatoes, and cucumber and mix. Add the vinegar and oil and toss lightly.

Serve in salad bowls and garnish with the green onion.

Makes 4-6 servings. Bon appétit!

Special Spinach Dip
1 8-oz cream cheese, softened
1 cup of sour cream
3 cups of spinach
3 green onions, chopped
Potato chips

Mix everything but the chips. Mix well! Dip the chips in the dip.

Sweet Potato Pie
2 lbs large sweet potatoes, peeled (3-4 potatoes)
1/2 cup butter, softened
2 cups sugar
4 eggs
1 tsp vanilla extract
1/2 tsp salt
1 12-oz can evaporated milk
1 15-oz package refrigerated, unbaked double pie crust

Place sweet potatoes in a large saucepan and add enough water to cover them. Bring to a boil. Boil for exactly 30 minutes. Drain potatoes and allow to cool slightly.

Preheat the oven to 375 degrees F. In a large mixing bowl, combine the sweet potatoes and butter. Beat with an electric mixer until smooth. Stir in the sugar until combined and then mix in eggs one at a time. Add vanilla, salt, and evaporated milk and blend well!

Line two 9-inch pie pans with crust. Pour the mixture into the pie crust, dividing it equally between the two pans. Set the filled pie pans on a cooking sheet and place in the oven. Bake for 70 minutes, or until a toothpick inserted in the center comes out clean.

Pineapple Sheet Cake
2 eggs
2 tsp baking soda
2 cups all-purpose flour
1 20-oz can crushed pineapple with juice
2 cups sugar

Icing:
1/4 cup butter, melted and cooled
1 3-oz package cream cheese, softened
1-1/2 cups powdered sugar

Preheat the oven to 350 degrees F. Grease and flour a 9×13-inch baking pan.

In a large bowl, mix together the eggs, baking soda, flour, pineapple (including juice), and sugar until smooth. Pour the batter into the prepared pan. Bake for 25-35 minutes.

While the cake is baking, make the icing. In a medium bowl, beat together the butter, cream cheese, and powdered sugar. Spread the icing on the warm cake.
